Banana-Nut Muffin

You can make your own banana-nut muffin! Who doesn’t love a fresh home-baked muffin with a cup of coffee in the morning? This is an easy recipe. I love banana bread and have made it religiously ever since I learned to make one in 2018. This time I wanted to give a little twist and make muffin instead of bread.

Ingredients
1. All-purpose flour: 2 cups
2. Baking soda: 1 tsp
3. Baking powder: 1/2 tsp (this is optional)
4. Cinnamon Powder: 1tsp
5. Sugar: 1/2 cup (1 cup if you like it really sweet)
6. Salt: 1/2 tsp
7. Walnut: 1/4 cup small pieces
8. Banana: 2 well ripe & mashed
9. Eggs: 2
10. Milk: 1 cup
11. Butter: 1 cup (=1 stick) melted
12. Vanilla extract: 1 tsp

Process
Preheat oven at 400 °F. Mix dry ingredients, 1 to 7 in a big bowl. In another bowl mashed bananas and add rest of the ingredients, 9 to 12. Then, add the wet ingredients to the dry ingredients. Mix them until all the ingredients are combined. You will see some lumps and that is fine. Do not over mix it. The finely mixed batter does not give the right texture of the muffin. Let the batter rest for about 10 min. It helps muffin to rise. Spray a little bit of oil or butter inside the muffin pan. If you are using muffin liners you do not need to do this. Here, I am using a large muffin pan which gives 6 large muffins.

Then, add batter to the muffin pan. Take some extra walnuts and use it as a topping. Bake it for 15 min in 400 °F then another 15 min at 350 °F. Take it out of the oven and let it cool for 10 min. Voila! You just made an amazing BNM. Enjoy it with a cup of your favorite tea or coffee.
